Everyone knows that yogurt is a great healthy snack, but did you know that it also makes baked goods extra moist and delicious? Using different flavour yogurts can really enhance cakes, muffins and even pies. I often bake with yogurt and frequently use Rachel’s Organic Yogurt. Recently Rachel’s Organic sent me two new flavours to try, Low Fat Strawberry and Low Fat Mango Yogurt.
The strawberry flavour was laced with chunks of fresh, plump strawberries and the mango flavour was a gorgeous saffron colour with succulent mango pieces. I was happy to eat both straight from the pot, but I also had fun making healthy desserts with them.
Here I simply mixed fresh strawberries with Rachel’s Low Fat Strawberry Yogurt and spooned it into pretty glass dishes. I then sprinkled the fruit and yogurt with crushed Amaretti biscuit crumbs before serving.
And of course, I baked. My Lemon & Ginger Cake was delicious made with the Low Fat Mango Yogurt.
I substituted the mango flavour yogurt for the lemon and ginger and then frosted the cake with a plain buttercream frosting. I’m looking forward to making the recipe with the strawberry yogurt – maybe as mini bundt cakes this time.
