Delicious toasties, or grilled cheese sandwiches as they are known in North America, are one of the most comforting lunches I know. Paired with a bowl of hot soup, toasties can be the ultimate comfort food. But there’s way more to toasties than just any old toasted cheese. Choosing the right cheese is really important and Leerdammer makes a delicious change of pace. Leerdammer recently introduced Leerdammer Toastie, thicker, toastie-size slices of Leerdammer cheese with a rich and creamy flavour.
Over the years I’ve become a bit of a toastie expert and I’ve found that all my favourite recipes work really well with Leerdammer. Whether it’s cheese and tomato, cheese and onion or cheese all by itself, Leerdammer makes a delicious toasted sandwich. Here are a couple of variations on the traditional toasted sandwich that work really well with the creamy, mild flavour of Leerdammer cheese.
Leerdammer Guacamole Toastie
2 slices of bread
half an avocado, peeled and mashed
1 small tomato, diced
sprinkling of chili and coriander to taste, optional
1 slice Leerdammer Toastie
2 teaspoons mild olive oil
Mix the tomato with the mashed avocado.
Add the chili and/or coriander, if using.
Spread the inside of one slice of bread with the avocado and tomato mixture.
Top with a slice of Leerdammer.
Place the second slice of bread on top and brush the outside of both pieces of bread with olive oil.
Toast in a frying pan over medium heat, turning once, until golden brown.
Leerdammer Hawaiian Toastie
2 slices of bread
1 slice Leerdammer Toastie (or 2 if you are not using ham)
1 slice ham (optional)
Dijon mustard (optional)
2 pineapple rings from a tin, drained
2 teaspoons mild olive oil
Lay the first slice of Leerdammer Toastie on the inside of one piece of bread.
Top with the pineapple rings, cutting them to size if necessary.
Place the ham – or the second slice of Leerdammer Toastie – on the pineapple.
Spread the inside of the top piece of bread with mustard, if using.
Brush the outside of both pieces of bread with olive oil.
Toast in a frying pan over medium heat, turning, once, until golden brown.

I’m so glad you like the recipes, Pauline! I love a traditional toastie (cheese and onion or cheese and tomato) but once in a while these variations can really spice things up a bit 🙂
