Apple Spiced Muffins with Rice Dream

Rice Dream is a delicious, easy to digest soy and dairy alternative. Made from the finest Po Valley Italian rice, it is naturally low in fat, lactose free and contains no artificial flavourings, colourings or preservatives. The perfect choice for a health conscious lifestyle, Rice Dream makes a great alternative for those who want or need an alternative to cow’s milk.

I was recently invited to try Rice Dream and I was pleasantly surprised by its taste and texture. I can drink ordinary milk, but if I was looking for a natural, lactose free alternative I would definitely consider Rice Dream. It works anywhere you would use ordinary milk – in your coffee, on your cereal or as a drink. You can also cook with it. I love these Apple Spice Muffins from the Rice Dream website.

To make 10 muffins you need:

2 free range eggs, lightly beaten
2¾ ounces caster sugar
7 fluid ounces Rice Dream
6 tablespoons light olive oil
5½ ounces plain flour
5½ ounces wholemeal flour
1 tablespoon baking powder
pinch of salt
½ teaspoon cinnamon
2 apples, peeled, cored and finely chopped
2 ounces chopped walnuts

For the topping:
1 tablespoon soft brown sugar
½ teaspoon cinnamon
pinch of nutmeg

Preheat the oven to 375ºF (190ºC or 170ºC for a fan oven).  Line muffin pans with paper cases.

Sift the flours, baking powder, salt and cinnamon together into a large bowl. Add the sugar, apples and walnuts and lightly mix.

In a separate bowl or jug, combine the eggs, Rice Dream and oil. Add the liquid ingredients to the dry ingredients and stir to mix thoroughly. Spoon the mixture into the muffin cases.

Mix the topping ingredients together and sprinkle over the muffins. Bake for 20 to 25 minutes or until well risen and golden.
