Baking Trends 2012


Yesterday I attended the Dr Oetker Baking 2012 Trend Showcase in London to preview some of the key baking trends that will take home bakers through the next twelve months. We enjoyed demonstrations, some very colourful and tasty treats, and an excellent panel discussion by industry experts.

Great British Bake Off Champion Edd Kimber was joined by pastry chef Claire Clark, Sarah Cook, Deputy Editor of BBC Good Food, Jane Curran, Food Editor of Woman and Home and Sarah Trivuncic of Maison Cupcake.

Dr Oetker are predicting that a key trend in baking this autumn will be colour, and are introducing some wonderful new products to make brighter baking easy. The panel also discussed other interesting trends. From friendly competitions, to baking instead of buying gifts, to the launch of new home-based businesses, the nostalgic love affair we are having with home baking seems set to continue for a very long time. And while we are always trying to create something new and different, the experts agreed it was the old fashioned, tried and true recipes that are the safest bet when you really want to impress. They are seeing a move towards more wow factor on the inside of baked goods as multi-coloured, multi-layered cakes are becoming more and more popular. Many of the baking ideas we are seeing here now have come from North America.

These multi-coloured, multi-layered, multi-flavoured cakes were made by Canada based Esther Reed Cakes last year.

Dr Oetker’s new Bright & Bold range are going to make it much easier for me to follow this trend with innovative gel food colourings in eight exciting colours and a wonderful new collection of neon sugars.

Later I watched a demonstration by Claire Clark, showing us how to make some lovely recipes, including these beautiful Rose Petal Cookies. The shortbread itself is lightly flavoured with rose water.


Later I found more great inspiration in these gorgeous pastel meringues, delightfully neon eclairs, and a fabulous cupcake bouquet.

I thoroughly enjoyed the Dr Oetker Baking Trends Showcase and I’m looking forward to the launch of their new product range later this year. One thing is for sure, whether you are an experienced baker or someone who is just starting out, there is no shortage of inspiration and tools to help you make your baking bright, bold and the very best it can be.
