Easy and Delicious Loaf Cakes

I love loaf cakes. Quick and easy to make, they keep well and are suitable for just about any time of day. A slice of loaf cake is as welcome at breakfast as it is for dessert. Most require very little in the way of decoration and if you do expend a little effort to drizzle a little something over the top, the results are often disproportionately rewarding.

I like to double my loaf cake recipes so they make two loaves, one to keep and one to give away or freeze. (Tip – if you are freezing a loaf cake slice it first and separate the slices with small pieces of greaseproof or parchment paper. That way you can thaw the slices individually.)

  2. I’m going to confess that most often I eat these types of loaves for breakfast rather than dessert. Of course, I don’t turn them down when it’s dessert time either.
