Even if you don’t have school age children, September signals the start of a busy new season. Work gets busier for everyone and easy meals are more important than ever. No matter how frantic our schedules, my family and I make a real effort to eat together when we are all at home. It’s a chance to reconnect and recharge. And while I love to cook, when it comes to weeknight dinners for the family, I’m all about quick and easy.

My Easy Sausage and Apple One Pot is a recipe I come back to time and time again. It’s wonderful the day you make it but the flavours deepen if you keep it in the fridge for a day or so. I often make a double batch so I can serve some on the day I make it and freeze another batch for later. Great with rice or mashed potatoes, I also like to serve it in those big Yorkshire puddings we can buy in the freezer section of our grocery stores here in the UK.
