An easy to make, healthy alternative to rice, my Mushroom Orzotto recipe makes a delicious vegetarian main dish or side.

My Mushroom Orzotto is a nutritious alternative to vegetarian risotto – but I also love to serve it as a tasty, healthy side with all kinds of other dishes, especially my Baked Cod with a Sautéed Veggie Topping.

  13. Good Afternoon April, I love your Mushroom Orzotto recipe. I love pearl barley and use it quite often during the winter time. As you mentioned, a nice alternative to rice.
    When September arrives, I can feel a difference in the morning air, not so much a chill, but definitely a difference. The weather here in the north is certainly changing.
