I’m in hyper-drive this week, getting ready for a trip as well as for some renovations my friend Shirley from Works for You is project managing for us while we are away. This is what my kitchen looks like now (on a very good day when it’s just been cleaned and I haven’t yet been allowed back in!).

We are having our kitchen floor re-tiled with warmer, creamier coloured tiles and I’m really excited about it. We are also doing a few other little refurbishments. Unfortunately all the furniture, bits and pieces have to be taken out first so that is keeping me busy. Let’s just say that there’s usually a lot more stuff on the counters than there is in the picture! If you want to have a bit more of a peak at the heart of my home, please click here.   2. I always love seeing kitchen remodels, but have no desire at all to do one myself! LOL I love getting peeks inside others’ homes. Thanks for sharing yours, April! Finished or not. 😉 Oh, and I loved the “on a very good day” part!

    This week I linked up a great Thai Green Salad with Spicy Almond Butter Dressing that can be made with or without shrimp. It’s terrific either way. Plus, I shared my gluten-free Red Lobster knockoff Garlic Cheese Biscuits. One reader even turned the recipe into a pizza crust.

(Soy is not present in my original recipe, but it is often contained in dairy-free products.) She states that she uses Earth’s Balance soy-free, dairy-free margarine and cheddar-style Daiya cheese. She's used both rice milk and coconut milk with good success. The following are some general notes on the ways I've made these biscuits. The original directions called for brushing the butter and garlic mix on the biscuits, but that’s a bit of a pain to me and I don’t want anything else to wash. Spooning the butter-garlic mixture over the hot biscuits worked just fine. Actually, next time I will probably just skip that step and add some minced garlic right to the biscuit mixture.
