I hope you all had a lovely weekend. We celebrate May Day in the UK and Europe so it’s a Bank Holiday weekend here. The weather has been very spring-like so my husband and I have been enjoying some nice long walks, a visit with friends and some time at the Mapledurham Food and Drink Festival held at historic Mapledurham House (above).

To celebrate spring finally arriving, I’ve been making my Zucchini Lemon and Chia Seed Muffins. I love them because they are full of healthy ingredients and taste amazing too – they are a great way to sneak more veggies into your kids.

    so nice to hear that some places are enjoying a lovely spring. In Philadelphia its been chilly and damp. I love the idea of adding chia seeds to muffins. I know they are so healthy , but I always forget to use them.
