Mapledurham House at The Hearth and Soul Hop

I hope you all had a lovely weekend. We celebrate May Day in the UK and Europe so it’s a Bank Holiday weekend here. The weather has been very spring-like so my husband and I have been enjoying some nice long walks, a visit with friends and some time at the Mapledurham Food and Drink Festival held at historic Mapledurham House (above).

To celebrate spring finally arriving, I’ve been making my Zucchini Lemon and Chia Seed Muffins. I love them because they are full of healthy ingredients and taste amazing too – they are a great way to sneak more veggies into your kids.

Thank you so much to everyone who visited and shared posts last week. This week I am featuring (clockwise from top left):

  1. Hi April, I will add my link next week with the new post. Just informing that I am hosting MLLA for the month of May 2016, which is an ongoing event since 2008. You can share any vegetarian lentil recipe which you posted in 2016. Please come and see the rules of the event.

    • Hi Sadhna, thank you so much for coming by to visit and sharing your event. I haven’t cooked a recipe with lentils yet, although I love to eat them. I will have to see what I can do and will share if I come up with something.
