It’s British Sausage Week, the perfect time to celebrate the great British banger and delicious sausage recipes! Why do we call them bangers? Well, back in the early part of the last century (there’s a bit of a debate as to whether it was during the First or Second World War) sausages were made with a lot of water in them because of a scarcity of ingredients. It gave them a propensity to explode – with a bang – while they were being cooked.
Although the name has stuck, most of today’s quality sausages are a far cry from the sausages referred to in the past as ‘bangers’. I like to buy sausages made with free range, pasture raised or organic meat. It is important to choose high quality sausages made sustainably produced local meat, bread, herbs, spices and very little water. Lower quality sausages may contain connective tissues, fat, parts of the animal you would really rather not eat, water, additives and preservatives.
Depending on the flavour of sausages you use, you can make many different dishes from just one recipe. My favourite sausages are the Caramelised Onion Sausages from our local butcher, Greens of Pangbourne, but I love to switch up my recipes with other flavours – like their Pork and Leek, Pork and Apple or Cumberland varieties.
Quick to cook, nutritious and delicious, these sausage recipes are perfect for busy weeknights but they work really well for entertaining too. If you are vegetarian, I’m pleased to say that good veggie sausages will work well in all of them. Do adjust the cooking times to suit your brand of vegetarian sausages.
