Thank you to everyone who visited and shared with the Hearth and Soul Hop last week. It has been another busy week – I can’t get over we are nearly half way through September already! I had a great time participating in the Love Your Leftovers Challenge, an event to help raise awareness of food waste and how to avoid it in association with The Royal Borough and Greenredeem.

I’ve also been working on the cookbook I am writing, recipe developing and baking some old favourites like this moist and delicious Banana Gingerbread Loaf. It’s perfect as at teatime or as a snack with a cup of tea or coffee, as a dessert with a big scoop of vanilla ice cream or even for breakfast on a cold morning.

  1. Oh my, leftovers going to waste is probably the thing that makes me feel the most guilty here! It seems so silly to let food go to waste when so many people are going hungry. I will definitely have to check out your post on that. Thanks for hosting!

    • I hope you find it helpful, Jamie. But honestly, it happens to us all! I cleaned out a cupboard with baking supplies the other day and was really upset by the things I found that were past their best. I’ve changed my system and am hoping to avoid that happening again.   6. You all are always doing something fun, April! I love that! 🙂 Leftovers are splendid in my mind. Some of my best creations come from leftovers and my pantry. Off to check your ideas out in a second.
