Two Yummy Sandwiches

Kingsmill have recently launched The Secretly Seeded One, a loaf baked with finely milled seeds and grains, part of a new range of three deliciously soft seeded loaves. They are perfect for sandwiches and these two recipes by food writer Jo Pratt are nutritious, kid friendly twists on old favourites that everyone will love.  Of course, the recipes will work with any bread, but if you can get it, The Secretly Seeded One is a sneaky yet delicious way to get more seeds and whole grains into your kids.

Both recipes make one sandwich and are easily doubled or tripled.

Chicken Delight Sandwich

This sandwich gets a spicy sweet lift from the chutney and has lots of crunch from the yummy vegetables.

2 slices of bread
1 small chicken breast, grilled or roasted, sliced
2 crisp lettuce leaves
2 spring onions, finely chopped
1 small carrot, grated
2 teaspoons mango chutney

Place the chicken breast onto one slice of the bread and top with the lettuce leaves.

Add the grated carrot and sprinkle with chopped spring onions. Spread the remaining slice of bread with mango chutney and place on the sandwich (mango chutney side down!).

Cut in half, and serve.

Peanut Butter and Fruit Burst Sandwich

The addition of apple gives the traditional peanut butter and banana combination a delicious crunch.

2 slices of bread

2 tablespoons peanut butter

1 small apple, thinly sliced

1 small banana, thinly sliced

Spread both slices of bread with the peanut butter.

Lay the sliced apple over one piece and place the banana on top. Cover with the other slice of bread (peanut butter side down). Cut in half or quarters, and serve.
