Chocolate and Banana Bundt Cake
Serves: Makes 1 cake
  • 250 grams (8.8 oz) butter, softened
  • ¾ cup sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2 large bananas, mashed
  • 2 teaspoons baking soda
  • ½ cup hot milk
  • 2½ cups plain (all purpose) flour
  • ½ cup cocoa powder
  • 2 teaspoons baking powder
  1. Preheat the oven to 170°C (340°F) and grease a bundt cake tin or round springform cake tin.
  2. Beat the butter and sugar together until light and creamy.
  3. Mix in the eggs one at a time.
  4. Add the banana and vanilla extract and mix well.
  5. Mix the baking soda in to the hot milk. Set aside.
  6. Sift the flour, cocoa powder and baking powder into the butter mixture and fold gently to combine. Add the milk mixture and combine well.
  7. Pour into the prepared cake tin and bake for 45 minutes or until a skewer inserted into the center comes out clean.
  8. Cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.
  9. Ice with chocolate ganache or icing, if desired.
