One of the most popular on-line food searches is ‘chicken recipes’ and it’s no wonder! Chicken is a mild flavoured, protein rich meat that can be served in so many different ways, is great for entertaining and generally very easy to prepare. Over the years I’ve blogged more chicken recipes than I can count. These are just some of my family favourites.
It’s really important to start with high quality, ethically raised chicken. Chickens raised on factory farms live in horrendous conditions. It would be much better to choose to prepare meatless meals instead of buying it. Your supermarket or local butcher should have free range, pasture raised or organic chicken available. Chicken freezes well, so if you find the good stuff on special offer, buy as much as you can use within a month or so and freeze it either before or after cooking.
I like to cook with chicken breasts or chicken supremes. Chicken supremes are chicken breasts with the wing bone still attached. There’s a school of thought that says that meat cooked with some bone has more flavour and I do agree with this. If you prefer, chicken thighs, chicken pieces or quarters will work in all of these recipes.

You can adjust the spicing of this easy to make, spicy sweet dish to suit your family’s tastes. Leftovers taste great in sandwiches and wraps.
Easy Chicken Pot Pie
My Easy Chicken Pot Pie uses ready made pastry and leftover cooked chicken so it’s really quick and easy to prepare. If you have the time and inclination, you can of course make the pastry from scratch. Either way, this is classic comfort food.
Apricot Almond Chicken
Apricot Almond Chicken pairs ender chicken breasts with a rich apricot glaze and crunchy almonds for a simple yet flavorful dinner option that is equally perfect for weeknight meals or special occasions.
Chicken with Cashew Nuts
Although Cashew Chicken takes a little longer to prepare, it’s well worth the effort and it’s still ready more quickly than take away. It also tastes so much better!
