Despite some very changeable weather, I’ve been concentrating on the sunny side of things and sharing recipes that are perfect for summer this week. Don’t miss one of my favourite easy summer dinners –

April, your Moroccan Shrimp and Couscous is calling my name and will definitely have a place on our summer dinner menus. For this week’s Hearth and Soul Hop I am sharing my favorite Father’s Day menu and recipes which I have dedicated to my dad who was a true foodie! I also brought by my Grilled Pepper Caprese Salad which is one of the featured recipes in my post and is a great addition to any summer barbecue or picnic. Couscous cooks in no time, and I like using it when I run out of time to cook. Shrimps too, cooks so quickly. Love your couscous and shrimps dish that is so easy and delicious.
