Although this summer promises to be very different from any other, we still have the opportunity to make the most of it. We may have to gather differently, or do things in unfamiliar ways, but we can still enjoy ourselves and make memories.

What’s Been Happening
It was really hot here last week, so I made lots of simple, hearty salads.
My Tuna Pasta Salad features crunchy veggies, canned tuna and pasta, making it perfect for summer barbecues, or for easy make ahead lunches. It’s another recipe with a history all of its own, so don’t miss it!
My husband and I have been walking at least 6 kilometres every morning (in fact we walked almost 50 kilometres this week alone) so I’ve been making the occasional treat.
With juicy pears, warming ginger and a hint of almond, my Pear and Ginger Cake recipe is easy to make and perfect for any occasion. It keeps pretty well too, so it’s nice to have on hand, or to share with your neighbours (at an appropriate social distance of course!).

And Miz Helen of Miz Helen’s Country Cottage is making memories with this delicious twist on the traditional, adding a gorgeous espresso frosting to her Banana Cake with Espresso Frosting.

Hi April–I’m finally back with a new recipe, Zucchini Potato Bake–which we have come to depend on–and an updated collection of gluten-free hamburger and hot dog roll recipes (just in time for summer grilling). Love so many things featured here today–the next backyard setting, your gluten-free spice cake, your tuna pasta salad (easily converted to gf), and gluten-free gnocchi, to name just a few.
