What’s Been Happening?
My husband and I spent the weekend in Edinburgh, exploring The Royal Yacht Britannia, Edinburgh Castle and the gorgeous ancient streets of this beautiful city. Keep an eye on my Facebook and Instagram pages for more. I’ll be sharing more on the blog soon too!
I’ve also got a deliciously healthy muffin recipe for you!
My Blueberry Chia Muffins with Lemon and Ginger are packed full of the delicious goodness of blueberry and chia seeds, and they are lower in sugar than most muffins as well!

Hi April! I just learned about using chia seed to replace eggs for vegan recipes! I talked about it in the pancake station post I shared. I’ve also had a chance to use San Marzano Tomatoes recently! I shared a simple marinara with fettuccine today as well. Have a great week!
Hi Helen, I’ll be interested to read your post. Although I use chia seeds a lot, I’ve never used them to replace eggs. I’ve heard of it though and would love to try! I adore tomatoes, so I’m sure I’ll enjoy that recipe too! Have a wonderful week!
