If you are a regular reader, you may have seen this photograph before. It was taken on our holiday in Canada, at my cousin Esther’s house. She made an amazing brunch one morning with fruit, bacon, hash browns, and featuring three different kinds of waffles. They were all so delicious, but so far I have only shared Esther’s recipe for Lemon Blueberry Waffles. There were also Orange Pecan and Banana Walnut Waffles too! So, just in time for the weekend, let me share yet another one of Esther’s wonderful waffle recipes with you.
Orange Pecan Waffles
(Makes 10 waffles)
2 tablespoons light brown sugar
2 cups all purpose flour
1 tablespoon baking powder
1½ teaspoon baking soda
½ teaspoon salt
1½ teaspoons ground cinnamon
1 tablespoon grated orange rind
1¾ cups milk
6 tablespoons vegetable oil
2 large eggs, lightly beaten
1 cup chopped pecans
Mix the brown sugar, flour, baking powder, baking soda, cinnamon and salt. Stir in the chopped pecans and orange rind.
Mix together the milk, oil and eggs. Add to the dry ingredients, and stir together until blended and smooth. Let the batter rest for about five minutes.
Preheat your waffle iron and cook the waffles according to manufacturer’s directions. Serve immediately or cool completely and freeze between layers of waxed or greaseproof paper.
