What’s Been Happening?
My husband Guy and I have covered over 714 km (that’s over 444 miles) on our walks in the woods near our home over the past 15 weeks. We walk between 6 and 9 km (between 3 and 5.5 miles) in about 60 to 90 minutes first thing every morning before Guy starts work, rain or shine. (We walk fast!) It’s such a great way to connect with each other before our busy days begin. I’m really proud of the distance we have covered. Don’t tell Guy, but I’ve set our next goal at 1000 km 😉
We are having some very warm weather here so this week it’s all about salads!
We are enjoying this easy Chicken Salad with Salsa and Quinoa pretty regularly! It combines flavourful salsa, grilled chicken and protein packed quinoa for a fresh, healthy salad recipe you you will love.
This Salade Frisée aux Lardons may sound a bit odd, but it makes a deliciously hearty lunch – and there’s a story behind it too!
I’ve also been serving larger portions of this Crab and Shrimp Appetizer Salad as a main course on the days we are craving seafood. It really hits the spot!

Good work on all the walking! I’ve been riding an exercise bike, but I am told I need weight-bearing exercise for good bone health. So I should do more walking. Salads are so good this time of year when it’s hot out and we want something light.

Happy August! Walking is the best exercise, April! We also hike but didn;t do as much as we like in July as it was very hot here. Now that cooler weather has returned we are getting back to our trails.

Kudos to you two! Walking is one of the very best exercises. Most people don’t know that it’s considered a weight-bearing exercise forcing us to work against gravity and strengthening our bones. When I was first diagnosed with celiac, I was also diagnosed with osteopenia. A gluten-free diet, a quality bone-building supplement, and walking eventually returned my bones to normal density. 🙂
You know I like that chicken salad! I find that when I have a daily routine, I usually stick to it. Walking in the morning is the best way to start the day. I have a friend that we cover 3 miles each morning. Your pace and mileage is impressive. Do you see any bears in your woods? thanks for hosting this great weekly party. I appreciate the opportunity to share my posts and to find other interesting recipes

I’m so glad you enjoy walking too, Judee! We have a lot of deer in the woods, including the tiny Roe Deer as well. There’s lots of rabbits and the really big jumping hares, although I rarely see the latter sadly. Sadly brown bears became extinct in the UK in the Middle Ages due to over-hunting and bear baiting, but they are hoping to re-introduce them in a special project by the Bristol Zoological Society. I really hope it works as they were native to the British Isles to start with. Thank you so much for your support of Hearth and Soul!
