Autumn Grilled Turkey Sandwich

Ingredients

  • 8 turkey breast cutlets the ones I purchased were small
  • 2 tbsp. olive oil
  • ½ cup apple juice
  • ¼ cup apple cider vinegar
  • 1 tsp. sage
  • 1 tsp. thyme
  • 1 tsp. oregano
  • 1 tsp. kosher salt
  • 1 tsp. onion powder
  • 8 slices crisp cooked bacon
  • 1 small apple thinly sliced
  • A few red onion rings
  • 4 slices sharp cheddar cheese
  • 8 slices of multi grain bread
  • 4 tbsp. mayonnaise

Instructions

  • Place cutlets in a shallow dish.
  • Mix together olive oil, apple juice, and vinegar, sage, thyme, and oregano, salt and onion powder. Marinate for at least one hour.
  • Preheat grill to medium.
  • Place cutlets on grill, cook for 5 minutes, and flip cook an additional five minutes.
  • Flip again and top with a slice of cheddar cheese.
  • Grill until melted.
  • To assemble each sandwich, place half a tablespoon of mayonnaise on bottom slice of bread.
  • Place a couple of red onion slices on top of mayonnaise.
  • Next place cutlet on the onion and top with two of the bacon slices for each sandwich.
  • Top with a few slices of the apple.
  • Spread the rest of the mayo on the top slice of bread and place on top of the apple slices.
  • Cut each sandwich in half and serve.
