Place cutlets in a shallow dish.
Mix together olive oil, apple juice, and vinegar, sage, thyme, and oregano, salt and onion powder. Marinate for at least one hour.
Preheat grill to medium.
Place cutlets on grill, cook for 5 minutes, and flip cook an additional five minutes.
Flip again and top with a slice of cheddar cheese.
Grill until melted.
To assemble each sandwich, place half a tablespoon of mayonnaise on bottom slice of bread.
Place a couple of red onion slices on top of mayonnaise.
Next place cutlet on the onion and top with two of the bacon slices for each sandwich.
Top with a few slices of the apple.
Spread the rest of the mayo on the top slice of bread and place on top of the apple slices.
Cut each sandwich in half and serve.
