My lobster rolls features sweet lobster, crunchy veggies, and a tasty homemade dressing, all served in a brioche or pretzel bun.

cooked lobster claw and tail meat, shelled and cut in small pieces

stick of celery, finely chopped

cup
red pepper, finely chopped
1
spring onions (scallions), finely chopped
¼
teaspoon
celery salt

tablespoon
Heinz pickle relish (hamburger relish), optional
2 to 3
tablespoons
mayonnaise
Use your favourite brand. I use Hellmann's extra light. You may need slightly more or less.

squeeze
lemon juice
You may need a little more.
salt and freshly ground pepper
to taste

hot dog buns
I like to use brioche or pretzel buns if possible. Use gluten-free buns if required.
Instructions
Combine the lobster, celery, red pepper, spring onions, celery salt and the green relish (if using) in a medium bowl.
Add the mayonnaise and stir through until thoroughly combined.
Add a squeeze of lemon juice and stir though.
Taste the mixture and add salt and pepper to taste. You can add an extra squeeze of lemon juice if you want to as well.
Toast the buns under a grill if desired.
Divide the lobster mixture between the buns.
Serve with salad and/or French fries.
