My lobster rolls features sweet lobster, crunchy veggies, and a tasty homemade dressing, all served in a brioche or pretzel bun.
Prep Time 20 minutes

Ingredients

  • 7 ounces cooked lobster claw and tail meat, shelled and cut in small pieces
  • 1 stick of celery, finely chopped
  • ¼ cup red pepper, finely chopped
  • 1 spring onions (scallions), finely chopped
  • ¼ teaspoon celery salt
  • 1 tablespoon Heinz pickle relish (hamburger relish), optional
  • 2 to 3 tablespoons mayonnaise Use your favourite brand. I use Hellmann's extra light. You may need slightly more or less.
  • 1 squeeze lemon juice You may need a little more.
  • salt and freshly ground pepper to taste
  • 4 hot dog buns I like to use brioche or pretzel buns if possible. Use gluten-free buns if required.

Instructions

  • Combine the lobster, celery, red pepper, spring onions, celery salt and the green relish (if using) in a medium bowl.
  • Add the mayonnaise and stir through until thoroughly combined.
  • Add a squeeze of lemon juice and stir though.
  • Taste the mixture and add salt and pepper to taste. You can add an extra squeeze of lemon juice if you want to as well.
  • Toast the buns under a grill if desired.
  • Divide the lobster mixture between the buns.
  • Serve with salad and/or French fries.
