Applesauce Raisin Pecan Muffins

Ingredients
  

  • ½ cup butter softened
  • ½ cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • cups applesauce
  • 2 cups all purpose plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup raisins
  • ½ cup pecan halves roughly chopped
  • For the topping
  • 2 teaspoons white sugar
  • ½ to 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease or line a 12-muffin muffin pan or use disposable mini loaf pans.
  • Cream the butter and sugar in an electric mixer.
  • Add the egg, vanilla and applesauce.
  • Beat for about one minute until light and fluffy.
  • Sift the flour, baking powder, baking soda and salt together into a large bowl.
  • Remove the bowl from the electric mixer.
  • Add the sifted flour mixture to the applesauce mixture and stir in using a wooden spoon, just until blended.
  • Stir in the raisins and pecans.
  • Divide the batter between the muffin pans or loaf pans.
  • Mix together the white sugar and cinnamon.
  • Sprinkle over the muffins or mini loaves.
  • Bake for 15 to 20 minutes or until a skewer inserted in the centre of the muffins comes out clean.
