What Am I Grateful For?
My Gratitude Journal is full of things I am grateful for! One of them is the community we’ve created here at Hearth and Soul, and for all of you who take part and support it. Thank you! Last week I shared more about my thoughts on gratitude on the blog.
In Why We Need Thanksgiving I write about gratitude, the practice of celebrating Thanksgiving, and why I think it would be a wonderful addition to our holiday calendar in the United Kingdom.
I’m also grateful to be able to treat my family and friends to delicious baking.
If it weren’t for the clue in the name, you’d never guess that this Butternut Pecan Loaf Cake is made with squash. It’s decadently delicious and full of warm fall spices. I love it just plain, or even spread with butter, but check out the recipe to find out how to dress it up for company!
I’m also grateful for comfort food on cold days.
This Mediterranean Vegetable Orzotto is a versatile, hearty dish with all the goodness of barley and lots of fresh veggies. Like its cousin risotto, orzotto is creamy, delicious and really sticks to your ribs on cold days.

For the last two years my husband and I have kept a blessings jar, each day we write a blessing on a little piece of paper for that day. At the end of the year we dump them all out and read them. Such a good way to center yourself to be thankful!

I totally agree, Miz Helen. The devastation is just heart breaking. I was staggered by how much smoke we saw on Saturday in San Jose, four hours away from the fires. The news footage of people fleeing were terrifying and humbling. There are so many people in the world contending with so many challenges. We are blessed indeed! Thank you so much for your support of Hearth and Soul. I hope your week is lovely too!

I’m late to the party this week but wanted to make sure to link up with some Thanksgiving dessert ideas for folks who don’t want to wait until next week to do their planning. Admittedly, I kind of like the fun of deciding on desserts at the last minute but with Thanksgiving there’s always too much going on beyond desserts so one really has to plan ahead!
Your Butternut Pecan Loaf looks fantastic! I know you called it Loaf Cake actually. Is that a UK term? I love it because I always struggle whether to call some recipes a loaf, as in quick bread, or a cake. So Loaf Cake works perfectly for that quandary!
Per usual, I love the variety of posts shared by you and your contributors, April. And I agree that every country can benefit from having a Thanksgiving. It’s my favorite holiday because it’s all about gratitude for family and friends with wonderful food and fellowship!

I’m not sure about the term Loaf Cake…I think I might have picked it up from my late Mom. There is often a very thin line between quick bread and cake, that is for sure!
