Hello and welcome to the Hearth and Soul Link party, and a celebration of great things to do in July. I’m hoping everyone in Canada has enjoyed their long weekend for a Canada Day, and I’m wishing everyone in the US a very Happy 4th of July! Here in the UK, we don’t have any July holidays, but we are enjoying some very sunny and warm weather. Our temperatures are around 30 degrees Celsius – that’s around 86 degrees Fahrenheit – and it’s expected to get even warmer. The majority of UK homes don’t have air conditioning, so it’s getting almost too warm. What’s the weather like where you are?
It’s still cool enough in the mornings to use the stove so I’m making the most of seasonal rhubarb.
My Baked Overnight Oatmeal with Rhubarb and Almonds may taste like dessert, but it’s really a healthy, gluten-free, refined-sugar free breakfast the whole family will love. Having this for breakfast is definitely a great thing to do in July!
We spent last weekend with family and friends at Burghley House, one of my favourite examples of Elizabethan architecture and an absolutely beautiful place to visit. We attended the Rolls Royce Enthusiast’s Club Annual Rally there. You can read more about our visit to Burghley last year in this post. I’m working on updating it with some new photographs at the moment so watch this space.
We also attended the RREC Gala dinner with family and friends. It was fun to dress up in 1940’s style and dance the night away. Here’s a ‘usie’ our son took on the night.
