Thank you so much to everyone who has commented on my new website design. Your positive response and encouragement has been so heartwarming! If you haven’t visited in a little while, you may notice a few changes around here – and I sure do hope you like them. I have a bit of updating to do to get everything completely ship shape, but we are off to a good start.
Spring is in full bloom here in England and we are enjoying our first Bank Holiday (long weekend) of May. Life feels like it is returning a bit more to normal – we even have some international travel planned! There are trips to the US and Canada planned later in the year and I’ll soon be winging my way to Ireland.

What’s Cooking in My Kitchen?
Cooking seasonally as much as possible is so important to me and never is it easier than in spring! Fresh British asparagus, all kinds of fruit and vegetables – even the first strawberries – are coming to our farm shops and farmers markets at the moment. It’s such a lovely time of year in the kitchen. Recently we enjoyed one of my favourite fish recipes.
My Cod with Chickpeas in a Mediterranean Ragu is quick, easy and oh, so delicious! I also made Spaghetti Primavera al Limone last week and some Quick and Easy Homemade Chicken Noodle Soup.
Breakfasts included my Best Avocado Toast and my Zucchini Lemon and Chia Seed Muffins.
