We are at home in England at the moment enjoying some lovely spring weather, including a bit of dining al fresco! (For a peek at my garden, check out this reel on Instagram.) It has been a quieter month as my husband and I got Norovirus. Thankfully neither of us had it too badly, but it left us both feeling exhausted and it took us a while to full get over it. In many ways it was a blessing as it really did give us a reset and reminded us to prioritise rest so we are more resilient. I need to take my own advice more often!
Bookworms Unite!
As many of you already know, I’m a real bookworm, and from your comments, kind replies to my newsletters and our lovely chats over email and social media, I know many of you are too. I’m excited to share that I’ll be announcing some new offerings very soon, starting with a Summer Book List full of my favourite reads. There may even be a shared reading experience or two in the works — something gentle and companionable for those of us who love to spend time with good books without any pressure. I’m also enjoying having some time in the kitchen to work on new recipes and content for the months ahead, as well as some of my other writing projects (more about those soon too!) I’m working on my Easy Ratatouille Recipe in the photograph above. It’s perfect for this time of year, and it is so versatile, it makes meal planning easy!

May is National Salad Month! Whether you fancy something a little different, like (from bottom left to right) a traditional Waldorf Salad, my Beet and Mango Salad with Walnuts or Salade Frisée aux Lardons – or if you are looking for more traditional recipes for Coleslaw and Potato Salad (both my late Mom’s vintage recipes, pictured at the top), I have definitely got you covered. Fancy a treat? This Mocha Cake Recipe is definitely on the shortlist for my birthday cake the first week in June. It’s a real family favourite – and there’s a dairy-free option in the main recipe and a separate gluten-free recipe available too. Both taste every bit as good as the original and you won’t believe how easy all three versions are to make!

So glad you all are back to good health now, April! I had surgery in January and then again at the end of February. My recoveries have gone as expected but still had their challenges. I’m so happy to be fine now except for an ongoing medication adjustment but I will get there!
I’ve linked up amazing Gluten-Free Focaccia, which my dear friend Linda made for me when she visited while I was recovering, and Magic Quinoa Bars, which are another one of my gf iterations of the classic Magic/7-Layer Bars.

Thank you, Catherine! We celebrate Mother’s Day on the fourth Sunday in Lent in the UK – it’s tied to the liturgical calendar. However I grew up celebrating the Canadian Mother’s Day with my Mom, which is the same date as the one in the US 🙂
I’m so sorry you both were sick! I’m glad you’re better now. I’ve found that rest seems to be the main ingredient in recovery. I know the British Mother’s Day has passed, but as it is Mother’s Day in the US today, I wish you a happy Mother’s Day!
