Easy Suppers for Busy Evenings

It’s funny, I always expect things to get a bit quieter after the Christmas and New Year rush, but I can’t remember a January when that has ever happened! At the moment we are moving our son back from Canada to the UK and only four days after we return home my husband and I are heading to Israel. I’ve been using some of these recipes for easy suppers our last few evenings in our son’s apartment and I know I’ll be making them on our return home to the UK as well.

Whether you fancy a bit of beef, fish or some pasta, I’ve got a quick, easy and wholesome easy supper recipe for you!

Beef Stroganoff

One of the most popular recipes on the blog ever,
my Beef Stroganoff tastes so good you won’t believe how quick and easy it is to make!

Warm Rice Salad with Sausages and Apples served

Warm Wild Rice Salad with Sausages and Apples is really easy to put together but it’s special enough for company.

Cod with Mushroom and Spinach Sauce

For a lighter but still satisfying dinner, try my delicious
Cod with Mushroom and Spinach Sauce.

Spicy Sausage Pasta

One of my son’s all time favourite pasta recipes, you can adjust the seasoning of this Spicy Sausage Pasta so that it’s just right for your family.

Creamy Mushroom, Bacon and Garlic Spaghetti

Perfect for a date night or Valentine’s meal,
Creamy Mushroom Bacon and Garlic Spaghetti is a dawdle to make and is delicious with a nice glass of red wine.

What’s your favourite quick and easy midweek meal?

  1. I adore beef stroganoff but really like the look of the warm salad with apples too. Oh, and a recipe involving pasta, bacon and mushrooms must be a winner! I’ll be saving this post for reference.
    Thanks… and happy new year

  2. Yum! Always looking for delicious and quick recipes! Looking forward to trying your pasta recipes!

  3. I feel the same way–thinking that things will calm down after the holidays. Never, ever happens. Ever! Everything looks delicious, but I think i might be partial to the stroganoff. My busy midweek meal is either breakfast for dinner or a pasta with whatever I can find in the fridge! Thank you for linking, April.
