I love loaf cakes. Quick and easy to make, they keep well and are suitable for just about any time of day. A slice of loaf cake is as welcome at breakfast as it is for dessert. Most require very little in the way of decoration and if you do expend a little effort to drizzle a little something over the top, the results are often disproportionately rewarding.
I like to double my loaf cake recipes so they make two loaves, one to keep and one to give away or freeze. (Tip – if you are freezing a loaf cake slice it first and separate the slices with small pieces of greaseproof or parchment paper. That way you can thaw the slices individually.)
