Apple and Walnut Salad is a really quick and easy salad, delicious for barbecues or buffets. I often use ready prepared salad for this recipe and you can use any kind of apples you like – from tart and tangy Granny Smith to sweet red Delicious. I am able to get an Apple Balsamic vinegar here in the UK that I use in the dressing which gives it an extra apple-y hit, but good ordinary balsamic vinegar is just fine if you can’t get the apple variety.
Balsamic Apple and Walnut Salad Recipe
To serve four people (you can easily double or triple this), you need:-
about 4 cups of salad leaves, preferably red and green ones
2 apples, cored and thinly sliced but not peeled
a couple handfuls of walnut halves
Dressing:-
3 tablespoons good mild olive oil
2 tablespoons Apple Balsamic Vinegar
1 teaspoon Dijon mustard
1 teaspoon sugar
Shake the dressing ingredients together in a clean jar.
Put the salad leaves, about three-quarters of the apple slices and three-quarters of the walnuts in a salad bowl and toss together. Pour the dressing over top and toss through.
Garnish the salad with the remaining apple slices and walnuts. Serve immediately.
