There’s the long looked forward to Christmas night turkey sandwich, the grilled ham and cheese and here in England there’s the Ploughman’s platter with slices of meat, cheese and chutney. Use up leftover turkey, ham or both in this Easy and Delicious Christmas Leftovers Dish.
It’s easy to whip up my Wonderful Leftovers Casserole using a package of ready made stuffing. It’s also a great way to use up your own homemade stuffing. You can substitute turkey or ham (or both) for the chicken in this dish and use your leftover vegetables too.
You can make stir fries with leftover meat, provided you are careful to add it at the very last minute so it just heats through and doesn’t overcook. My easy recipe for Leftover Turkey and Almond Stir Fry shows you how!
Fancy something light?
Use leftover turkey instead of chicken in my tasty Coronation Chicken Salad.
More ideas for leftover ham:
Stir finely chopped leftover ham through scrambled eggs or use it in omelettes.
Add leftover ham to pasta casseroles and bakes.
Crockpot Ham and Bean Soup from Moore or Less Cooking
More ideas for leftover turkey:
Fry up some onions and peppers, add steamed couscous and leftover turkey and heat through for a delicious warm salad.
Gently sauté onions, celery and thinly sliced carrots. Add chicken broth and spaghetti broken into small pieces. Cook until the spaghetti is a dente before adding leftover chicken or turkey for a tasty noodle soup.
Add to pasta casseroles and bakes.

I think maybe I like some of these leftover ideas more than the main dish! Coronation Chicken is an all-time favourite of mine and I can never get enough cold ham. Last night I stir-fried some pork and it came out well; wish I had thought to add almonds, as you suggested, though!
