Tips for Cooking Shrimp
Be sure to buy fresh shrimp that are as sustainably fished or farmed as possible.
Fresh shrimp should smell mild, a little like the ocean. If they have a sour or ammonia-like smell, they have gone bad and should not be cooked or eaten.
Keep shrimp in the fridge until just before cooking.
Shrimp do not take a long time to cook, but they should be cooked through, until they are opaque and have turned bright pink or orange. Be careful not to overcook them as they will be tough.
