With after school clubs, activities and sports starting up, kids – and adults – need delicious, nutritious meals without a lot of fuss. Even if you don’t have school age children, these vegetarian dinner ideas can be a real help during the busy autumn season, and in the run up to the holidays.

      1. I did make veggie moussaka but to a very different recipe to you based on available supplies – I used red lentils, some left over ratatouille plus other fridge bottom veg. Remember I mentioned my meat loving son. He LOVED it and had seconds 🙂
