Here are some of my most popular vegetarian recipes, perfect for back to school.
Served alongside a baked potato and some salad or coleslaw, my Easy Vegetarian Quiche makes for a hearty meal. Using store bought pastry means it is quick and easy. Delicious hot or cold, leftovers are great for lunch boxes too.
A hearty texture and delicious flavour mean my Vegetarian Spaghetti Bolognese has fooled a meat eater more than once! Using a meat substitute and lots of flavourful ingredients makes this recipe a delicious alternative to traditional spaghetti bolognese.
Vegetarian sausages make Sticky Sausage Skewers a kid-friendly treat the whole family will love. Try them served over rice or with comforting mashed potatoes. They are also delicious served in crusty rolls or baguettes. Simply remove the skewers as you slide them into the buns to make hearty sausage sandwiches.
One of the favourite vegetarian meals at our house, my Spinach Florentine Casserole‘s layers of flavour combine to make an iron-rich dish the whole family will love.
Crispy vegetables and a lightly spiced peanut sauce make this Vegan Pad Thai a seriously kid-friendly meal. The work of moments, it’s one of my go to recipes on nights when I’m tempted by take away!

That is so true, Angie, it’s just a matter of being creative with flavours and textures 🙂
I love meatless dinners. I try to do 1-2 meatless nights a week, especially during the school year. I actually find it easier to prepare. Soups are one of my favorite meatless meals.
I enjoy meatless soups as well, Diana, especially this time of year!
Lovely collection April, I need this as busy with two little ones.
Thank you, Swathi! I hope your family enjoys the recipes 🙂
Great recipe roundup! I love creating meat free dishes for my blog too. My goal is to make the meat eaters in my family not realize they aren’t even eating it!

Vegetarian Moussaka – just what I need to use up aubergines that I have lurking. Thank you for the inspiration! Popping over from the Back to School linky.
My pleasure! Thank you for visiting and I hope you and yours enjoy the recipe, Rosie 🙂
I did make veggie moussaka but to a very different recipe to you based on available supplies – I used red lentils, some left over ratatouille plus other fridge bottom veg. Remember I mentioned my meat loving son. He LOVED it and had seconds 🙂
I’m glad your version turned out so well, Rosie! It’s really rewarding when a meat eater loves a veggie dish we create. I’m so glad I could inspire you – and that you used what you had available. I’m a big supporter of ‘love food, hate waste’ 🙂
All of these look so tasty!
