Before long, the September rush will begin and we’ll be hurtling towards (dare I say it?) Christmas at breakneck speed. With after school clubs, activities and sports starting up, easy back to school dinner ideas are the key to making a full schedule much more manageable and life a lot more fun.
Even if you don’t have school age children, September signals the start of a busy new season. Work picks up for most everyone and easy meals are more important than ever. No matter how frantic our schedules, my family and I make a real effort to eat together when we are all at home. It’s a chance to reconnect and recharge. And while I love to cook, when it comes to weeknight dinners for the family, I’m all about quick and easy.

My easy back to school dinner ideas will fit in any menu plan and there’s something for just about everyone.
My Easy Lemon and Herb Chicken Marinade lets you cook up a batch of moist and delicious chicken breasts early in the week to serve both hot and cold. I serve the chicken hot the first night with potatoes or rice and some veggies. Then I keep the leftovers in the fridge for easy pasta dishes like my Chicken Stroganoff Pasta Bake and salads such as my tasty Coronation Chicken. The latter is perfect for lunch boxes.
Quiche is delicious for breakfast, lunch or dinner. On busy weeknights I serve slices of my Sausage and Leek Quiche with baked potatoes and salad or coleslaw for a hearty meal that is seriously easy on the cook.

My Salmon and Broccoli Stir Fry is a tasty, nutrient dense meal in a bowl that only takes around half an hour to prepare. Serve it with chopsticks to make dinnertime more fun!
This hearty Spicy Sausage Pasta is a full of flavour family favourite that lets you adjust the spice factor to suit your family’s tastes. It works well with veggie sausages too!

My Easy Sausage and Apple One Pot is a recipe I come back to time and time again. It’s wonderful the day you make it but the flavours deepen if you keep it in the fridge for a day or so. I often make a double batch so I can serve some on the day I make it and freeze another batch for later. Great with rice or mashed potatoes, I also like to serve it in those big Yorkshire puddings we can buy in the freezer section of our grocery stores here in the UK.

So many wonderful and simple meal ideas. I just made a turkey pot pie this weekend and we have a quiche in the freezer (I typically make two at a time so we can eat one fresh and freeze the other for another night). I find casseroles, make ahead meals, and my crock pot to be the best ways to get easy and delicious meals on the table when we’re busy. Pinned.
